Founder Bio
Art Eggertsen, also known as The Food Coach, since 1995 has dedicated his life to the study and advocacy of nutrition. A self proclaimed “foody,” Art is fascinated by all aspects of food: where it comes from, how it is preserved and packaged, the preparation methods and techniques, and the various flavors, aromas, colors and textures of it.
Art turned his passion for food and his insatiable thirst for knowledge into a lifestyle. He has owned two restaurants, and developed menus and managed for countless others. In addition, Art founded and directed The Utah Wellness Center, and has worked closely with numerous nationally and internationally known athletes to design specific diet programs for them.
In Washington D.C. he worked as a Congressional lobbyist and institutional liaison for a major national non-profit and represented their interests in the areas of nutrition education policy, and agricultural production policy. In representing his organizations interests at regulatory and Congressional policy hearings, he relied heavily on many scientific advisory committees, or “think tanks” whose members included such notable names as Dr. Dean Ornish, Dr. John McDougall, Dr. T. Colin Campbell and Dr. Benjamin Spock.
Art began working with the Image Reborn organization in 2001 and has assisted hundreds of cancer patients who have attended their retreats. He has served as the Director of Nutrition Programs for Image Reborn as well as the Women Beyond Cancer Foundation. Art has also recently founded Entelechy, a planned sustainability model located near Kooskia, Idaho. Entelechy is also a working retreat dedicated to the prevention and reversal of many potentially life-threatening diseases.
The PROBAR, LLC was founded by Art in 2002 as a means to provide wholesome, nutritious, and delicious tasting meal replacement bars to his clients. He currently manages and directs research and development for PROBAR.
