Snack time. Kids are hungry, impatient and tearing through the kitchen looking for something, ANYTHING to digest. They are reaching for the fruit roll-ups, old stale potato chips from who knows how long ago and rummaging through the freezer to see if maybe there was one popsicle left. You try to give your kids healthy options but sometimes it is just too hard. We know this situation all too well at PROBAR. That’s why we decided to do a series on kid-friendly vegan snacks featuring tasty, healthy, fast snacks that we know your kids (and you!) will love.
Our first snack is so easy and quick. We call them Banana Pops at our house and my kids and I love them. This snack is great because you can customize the toppings to your family’s preferences. I put chocolate chips, oats and shredded coconut on ours.
1 tablespoon peanut butter
Coconut flakes or shredded coconut
Raisins or dried cranberries
Directions: Peel and cut the banana in half. Spread the peanut butter evenly on both halves of the banana. Sprinkle your toppings onto the peanut butter coated banana. You can enjoy right away or wrap in wax paper and store in freezer for a frozen snack later.
